做法(fǎ ):洗净宰好鲫鱼,洗净(jìng )淮(huái )山和(hé )薏米。用清水把陈皮泡(pào )软,拍裂一小(xiǎo )块姜(jiāng ),热(rè )锅,用姜块(kuài )在锅上(shàng )擦一遍,放(fàng )两(liǎng )勺(sháo )油(yóu ),待油(yóu )六成(chéng )热下鱼,煎(jiān )至(zhì )微(wēi )黄。煮(zhǔ )沸(fèi )瓦煲(bāo )里的清水,放(fàng )入煎煮好的鲫鱼和其他(tā )材料,武火煮沸,转中小火(huǒ )煲一个半小(xiǎo )时,下(xià )盐(yán )调味即可品(pǐn )尝。
