做法(fǎ ):洗净(jìng )宰好(hǎo )鲫鱼,洗净淮山和(hé )薏米。用(yòng )清水(shuǐ )把(bǎ )陈皮泡软(ruǎn ),拍裂一小块姜(jiāng ),热(rè )锅,用(yòng )姜块在锅上(shàng )擦一遍,放两(liǎng )勺(sháo )油,待(dài )油六成热(rè )下鱼,煎至微黄。煮沸(fèi )瓦煲里(lǐ )的(de )清水,放(fàng )入煎(jiān )煮好的鲫鱼和其他(tā )材料,武火煮(zhǔ )沸,转中小(xiǎo )火煲(bāo )一个半(bàn )小(xiǎo )时(shí ),下盐调(diào )味即可品尝。
